Sweet Potatoe Stuffed Sweet Peppers and Plaice on Spinach.


2 double place fillets

2 sweet peppers

2 large or 4 small sweet potatoes – baked until soft ( 160C – 1-1.5hours )

6 sping onions – chopped finely

50g spinach

1tbslp olive oil

Salt and pepper.

Oven 220C & Pan

1.Scoop out the flesh of the sweet potatoes , mash them with a fork until all the lumps ahve gone and add the spring onions – season with salt and pepper.

2. Cut the peppers in half and remove the seeds and split the sweet potatoes equally between them. put in the oven for approx 25 minutes – until the pepper is soft .

3.Season the fish with salt and pepper and brush with the oil.  Cook skin side down first nearly all the way through and turn carefully to finish.

4. Serve the peppers on top of the spinach and the fish on the side.
