Roasted bannna with peanuts & dried fruit

Ingredients :

2 bannanas

3tblsp peanuts ( raw skinned)

2tblsp goji berries

2tblsp dried cranberries

2tbslp cacoa nibs

2tblsp sultanas

1tblsp honey

1 lemon juiced


Method :

  1. Cut off 2 pieces of tinfoil approx A4 size.
  2. Peel the bananas and put on on each pice of foil.
  3. Split the ingredients between the 2 – scrunch up the foil to make little bags.
  4. Put in the oven for about 10 minutes until warmed through and the banana is soft.
  5. Serve warm or cold alone or with greek yoghurt.
