Baked Salmon and spicy peppers
2 salmon fillets
3 red peppers – de seeded cut into 8
6 plum tomatoes – quartered
2 chillis – de seeded and chooped
1tblsp red wine vinegar
Salt and pepper
Mix all ingredients except salmon together and place in a casserole dish or oven tray.
Season the fish and place on top put on the lid ( or tinfoil if you are an oven tray)
In the oven 180c for 25 minutes.
Remove from the oven place salmon on plate , stir pepper mix and season to taste serve alongside salmon
