150g cashews ( soak in water overnight then drain)
40ml fresh lemon juice ( 1 lemon)
1 fresh date pitted
1 tsp salt
2tsp mustard powder
2tsp apple cider vinegar
1 clove garlic
70ml rape seed/ hemp oil ( an oil that does not have a strong flavour)
- Put everything aside from the oil in a food processor and blend until smooth.
- Scrape down the side of the machine and turn on again.
- Once it is all smooth add the oil slowly.
- Store in a sealed container in the fridge for a week.
NB – I am currently trying to freeze this I will let you know how it goes.
Use a clean spoon when getting it out the tub or it can cross contaminate and make it go off quicker!
