Raw “Mayonaise”

Ingredients:

150g cashews ( soak in water overnight then drain)

100ml water

40ml fresh lemon juice ( 1 lemon)

1 fresh date pitted

1 tsp salt

2tsp mustard powder

2tsp apple cider vinegar

1 clove garlic

70ml rape seed/ hemp oil ( an oil that does not have a strong flavour)

Method :

  1. Put everything aside from the oil in a food processor and blend until smooth.
  2. Scrape down the side of the machine and turn on again.
  3. Once it is all smooth add the oil slowly.
  4. Store in a sealed container in the fridge for a week.

NB – I  am currently trying to freeze this I will let you know how it goes.

Use a clean spoon when getting it out the tub or it can cross contaminate and make it go off quicker!
